The Annisa's Chef Anita Lo prepares green eggs (VIDEO)

Chef Anita Lo takes a Dr. Seuss fantasy and turns it into reality for Potluck Video.

Chef Lo, who works at The Annisa, prepares green, soft-scrambled eggs with beet greens and spring onion.  Cooking for Share Our Strength's No Kid Hungry campaign, Lo shows viewers an easy way to incorporate vegetables into a breakfast meal.  "I like green eggs because they're fun and I think they're good for kids.  I loved the book Green Eggs and Ham growing up."

Share Our Strength's No Kid Hungry campaign aims to provide nutritious food for children in need and teaches families how to cook healthy, affordable meals.

Lo begins with local, farm eggs and uses an egg shell top removing tool.  After salt and peppering the egg, she adds a puree of green onion and olive oil.  This puree adds the specific green coloring to the green eggs.

With a pan on low heat, Lo adds olive oil until it becomes heated.  She then tosses julienned beet greens and spring onion until the greens are wilted and the onion is cooked.   After the vegetables are cooked, Lo adds in the green eggs along with tarragon and chives.  With the heat still on low, Lo waits for the eggs to cook.  "For a soft, scrambled egg," says Lo, "You want to go slow.  In France, they say that cooked eggs should look like cottage cheese."

Once the eggs are prepared, she gently scoops the eggs back into the egg shell and garnishes with some sliced spring onion tops.  She accompanies the egg with a potato pancake that she prepared earlier.
