Potluck Video introduces Volver's Milk and Cereal (VIDEO)

Jose Garces' latest Philadelphian restaurant, Volver, serves up a traditional breakfast dish with a twist and Garces tells Potluck Video all about it..

Volver's Milk and Cereal dish is unique in that it takes a familiar concept from the breakfast menu.  The cuisine is based off of Garces' childhood and traveling experiences and this dish in particular is a play on Frosted Flakes.

"I have found that throughout my different dining experiences there have been certain transformative experiences for me personally that have shaped who I am as a culinarian," says Garces.  "I'm looking to take some of those experiences along with with our own cooking techniques and creativity to really bring those experiences to life and create something really memorable."

Using a base of Chicken Oysters, Bacon and Oysters, Black Trumpet Mushroom Rice Flakes are sprinkled on top to mimic the Corn Flake concept.  A Chicken Oyster is a piece of dark chicken meat that is tucked between the leg and the backbone.

The milk of the Milk and Cereal dish is actually not milk.  It's a blend of White Asparagus that really connects the idea to the physical concept of the dish.  The milk is contained in a clear, glass milk carton that Garces discovered at the MOMA in New York.

For an added flake-like component, Black Truffle shavings are added on top of the dish to join the Black Trumpet Mushrooms.  A poached Quail Egg is gently laid on top of this savory mountain.
